Chewy Oat Cookies in the Thermomix

Today I will be showing you how to make Chewy Oat Cookies in the Thermomix. This is my first recipe post on my blog, so I am really excited to share this with you!
Cookies are always a great treat with tea of just as a snack. These cookies get their special chewy centre from the packed sugar, while the cinnamon adds a really nice flavour.

Preparation time required: Less than 10 minutes
Baking time: 10-15 minutes
Total time: 25 minutes
Serving size: 20-24 cookies, around 3cm / 1.5 inches diameter
Ingredients:
- 120 g canola oil
- 110 g packed brown sugar
- 1 eggs
- 5 g vanilla extract
- 60 g all-purpose flour
- 1/4tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 160 g rolled oats
So here’s how to do it!
Instructions:
1. Preheat the oven to 180 degrees/ gas mark 4
2. Get all the ingredients out.
3. Measure in the sugar, oil, vanilla and egg using the Thermomix weighing function.
4. Mix for 20 seconds on speed 7.
The mixture will look something like this:
Just take the Thermomix spatula, and scrap down the sides of the bowl. This will make sure everything gets incorporated and is well-mixed.
5. Add oats, flour, salt, cinnamon and the bicarbonate of soda.
6. Mix this for 10 seconds on speed 4 with a reverse blade.
7. After mixing, scrape the sides back down again and put on for another 5 seconds (speed 4, reverse blade).
The mixture will look like this.
You’re now ready to lay out the mixture!
8. Place teaspoon-sized drops of the batter onto a baking sheet lined with baking paper, or use a silicone mat.
Don’t worry about them being perfect though – they will flatten naturally during cooking and bake into a nice shape!
9. Place them into the oven on the middle shelf and bake for 10-15 minutes until golden.
10. Take out, leave to cool, and enjoy!
